Bhindi is a vegetable which you can cook in as many ways as you want. The day before I saw one of my blogger friends use it in pulav along with spinach which was very new but interesting combo . The simple stir fry , or dahi bhindi or stuff bhindi whichever way it is made it makes an interesting addition to your menu.
Ingredients :
500 gm ..............Lady's fingers (Bhindi or Okra )
1/2 cup .................Semoline (rawa)
1/2 cup.................dry roasted besan ( chana flour)
1 tbsp................Chilli powder
1 tsp.................Turmeric powder
1/2 cup............thick sour curd
salt as needed
15 - 20 ..................garlic flakes crushed
Oil
Method :
Wash and wipe the bhindis dry and give them a slit on one side.
Mix together rawa, besan, chilly powder, turmeric, salt and curds to make a thick paste .
Stuff this filling in the slit.
Heat oil in a wide flat pan and add crushed garlic flakes.
When garlic turns golden brown arrange the bhindis taking care to keep the slit side on top.
Cook without covering on a medium to low flame till the below side is crisp.
Pour some oil of top and turn the bhindis and cook the other side till crisp.
Don't turn the bhindis again and again as this will make the stuffing come out.
This dish is very very tasty .
It requires little more oil than the regular vegetables.
