Spinach Risotto ( Italian Palak Rice )

Nowdays international cuisine is gaining popularity amongst the Indians . Few years back non Indian food mostly meant chinese but today Italian , Mexican and Thai dishes have become as much popular as chinese and they are also eagerly tried out in Indian kitchens .
Spinach risotto is a very popular and famous dish from Italy. In simple words it is a  type of palak pulav with the deliciousness of cheese and pepper. It has somewhat sticky texture unlike Indian pulavs or biryanis where the rice grains have to be separate .
I made this pulav for our dinner along with soup and everyone at home thoroughly enjoyed it.


Ingredients :

2 bunches.......................Spinach
1 ..............................onion ( finely chopped)
2 cups .......................rice ( any sticky quality)
1 tsp........................pepper powder
1 tsp.......................cinammon powder
3/4 cup..................grated cheese ( I used cheddar cheese)
2 tbsp.......................butter
olive oil







Method :

Wash the spinach and chop it finely.
Heat butter in a pan and saute onions till golden.
Wash the rice and add it to the pan.
Saute rice for 5 minutes .
Add cinammon and  pepper powder and salt.
Mix well and add 4 cups water.
When the rice is almost cooked add the cut spinach and 1/2/ cup grated cheese.
Mix well and spread the remaining cheese on top.
Cook till the cheese melts or you can also bake it for 10 minutes in an oven.
Serve hot.
