Khandeshi vangyacha bharit is a very popular maharashtrian dish and is prepared in almost all the marathi homes. It tastes best with bhakris or chapatis along with zunka (dish made with spring onions and besan).
Ingredients :
1 no.......................Big brinjal (meant for Bharta)
1 small bunch ................Spring Onions
7 to 8 ..................cloves of garlic peeled and crushed
2 to 3 .................green chillies finely chopped
2 tbsp...................finely chopped coriander leaves
2 tsbp...................oil
salt
curd ( optional)
Method :
Roast the eggplant directly of gas flames , turning it on all sides.
When the skin is burnt and the egg plant is cooked put off the gas and cool it.
Remove the skin of the egg plant, mash it and keep aside.
Chop the spring onions and keep the onions and greens separate.
In a pan heat oil add chopped onions , crushed garlic and chillies and saute well.
Then add the greens and saute for 5 minutes .
Finally add the mashed eggplant and cook for 5 more minutes.
Add the salt and coriander leaves .
At the time of serving add curds and serve.
It also tastes good without curd if you want to omit it.
