Shrikhand is a very traditional dessert of Maharashtra .It is a very delicous dessert and when paired with mangoes the result is a heavenly dessert called Amrakhand which is usually had with puries .
It is a very popular sweet usually made on all major festivals and especially on Gudi Padwa , Dussehra etc.
It is made with strained curds ( called chakka in marathi or chenna in hindi ) and then sugar and nuts are added to it.
Ingredients :
1 kg ....................Curds
2 cups ...................Thick Alphonso Mango Puree
5 tbsp...................Milk Powder ( I used Nestle )
5 tbsp....................Sugar ( Powdered)
7/8 ...................Almonds
7/8 ..................Pistachios
5/6 strands ..........saffron
Method :
Tie the curd in a cheese cloth and keep over night so that all the water drains out.
Next day moring add the milk powder and mango puree and mix well with your hands .
Rather than blending it in a blender mixing with hands gives it a smooth but granular texture.
Now add powdered sugar and go on mixing with hands.
By now it will be very soft and fluffy.
Lastly add Almond slivers, Pistachio slivers and saffron dissoved in 1 tbsp warm milk.
Again give a nice mix with your hands .
Keep in the fridge for 4 to 5 hours.
Serve chilled with puris.
