Oats n Ragi Idli ( ओट्स आणि नाचणीची इडली )

English

We all know that idli is the staple breakfast of most of the South Indian Kitchens . Soft steaming hot idlis never fail to satisfy your hunger and the taste buds too .
I usually try making different types of idlis as the variety appeals the eye and pallete .
Oats and Ragi ( nachani ) both being very nutritious make an ideal combo for the first and most important meal the day .
So why not try using them in our favourite idlis ?

Ingredients :

1 cup - oats
1 cup - nachani flour
1/4 cup - rice flour
1/4 cup - rawa
2 tbsp - curds
१ sachet - eno
salt

Method :

Mix all the above ingredients except eno with just enough water to make thick batter .

Keep the batter aside for half an hour .

Grease the idli mould .

If the batter is very dry add little water and eno and mix well .

Add water in the cooker , keep the idli maker in cooker and cook without pressure for 15/20 minutes.

After 20 minutes take the idli maker out and sprinkle little water on the idlis .

Then remove them with the help of a spoon .

Serve hot with green chutney or any other chutney of your choice.

Oats and Jaggery Chikki

I made this chikki for this month's shhh-cooking-secretly-challenge an event started by Priya Suresh . My Partner for this month is Laxmi Priya and she chose oats and jaggery as my secret ingredients. I used chikki gud ( special variety of jaggery used only to make chikkis and laddoos ) for this. Nuts I used were a mix of walnuts, almonds and cashew nuts but you can add or skip the nuts as per your choice. This is a good option as a sweet treat for all of us . Even kids will find this healthy sweet very tempting.

Ingredients :

2 cup ....................oats
1 cup....................shredded jaggery ( used for chikki)
1/4 cup.................black currants
1/4 cup.................candied orange peels
1/2 cup................mixed nuts ( crushed coarsely )
1 tsp..................ghee

Method :

Heat the shredded jaggery in a thick bottom pan with ghee.

The jaggery will first melt and then start bubbling.

Keep a bowl with cold water and drop very little bubbling jaggery in this bowl.

Try gathering the jaggery in bowl and form a ball.

Hit this hardned ball of jaggery on kitchen platform.

If it makes noise like you have hit a stone then the jaggery syrup is ready for use.

Now add all the above things and mix really well.

Immediately pour this on a well greased tray.

Take a greased knife and cut the chikki into desired shapes.

Let the chikki cool completely.

Then separate it and store in a plastic container.

If it becomes difficult to remove the chikki from the tray just hold the tray for a minute on medium flame.

The chikki now can easily be removed.

Granola Bars

Since long I wanted to make these granola bars and when our this month's host Sharanya suggested these bars as one of the challenges for Home Bakers Challenge an event started by Priya Suresh   this month I just had to grab the opportunity. I skipped the egg given in the original recipe and also used jaggery instead of sugar . The jaggery gave a wonderful Indian flavor to the granola bars which we all loved.

Thanks a lot Priya and Sharanya for this healthy snack.

Ingredients :

3 cups .........................oats
1/2 cup ...................  dry black currants
1/2 cup.....................dates ( chopped )
1/2 cup....................mix nuts ( almonds, walnuts etc)
1/2 cup...................honey
1/2 cup ................jaggery ( used to make chikki )
1/2 cup.................home made butter ( loni )
1 tsp + 1 tsp .........ghee

Method :

Dry roast the oats for 5 to 8 minutes and keep aside.

Beat butter till soft and add all except oatss ,ghee and jaggery.

Mix well everything  and keep aside.

Heat 1 tsp ghee in a pan and add chikki jaggery with 2 tbsp water.

When the mixture boils and becomes frothy drop 1/2 tsp of this mixture in a bowl of cold water.

The mixture should immdiately harden when tried to shape it into a ball with your fingers.

Remove the mixture from fire and pour it on the above mixture.

Add oats to this and mix well .

Grease the tray with remaing ghee.

Mix everything very well and spread it evenly on a greased tray pressing firmly with fingers.

Bake it for 20 to 25 minutes in an oven at 180 degrees.

When cold cut into desired shapes.

You have your very own homemade healthy granola bars ready.

Banana Oats Milkshake

I love to have shakes and juices and mocktails . But my idea to have them till now was  to enjoy these refreshing drinks in the evening or at night with one meal dish at leisure .

Though recently I have started preparing them in the morning for my son who leaves college early . So because of him we all are also getting into the habit of having these drinks in the morning as a part of our breakfast, and I am amazed at the diffrence in my energy levels due to this.

Since I have made them a regular during breakfast I have become more active and  enthusiastic and so would recommend all to start this healthy practice at home.

Today I had made this lovely banana milkshake with oats and dates . It was deliciously filling and we enjoyed it thoroughly.

Ingredients :

1 no..................ripe but firm banana
2 tbsp...............roasted and powdered oats
2 cups ..............milk
4 no..................dates
1 tbsp...............crushed walnuts

Method :

Blend everything except walnuts in a blender to a smooth consistency.
You can add more milk if you like.
While serving top with crushed walnuts.

Methi Muthias

Methi or Fenugreek is a very rich source of calcium and should be included regularly in our diet. Though due to its somewhat bitter taste many people avoid eating this vegetable.

But if included in dishes like dosas, muthias, parathas and puris I think hardly anyone will be able to stay away from it.

So start making use of this vegetable in your daily diet regularly.

To start with make these simple and healthy muthias for breakfast and start your day with a shot of calcium.

Ingredients :

1 bunch .....................methi leaves ( fenugreek)
1/2 cup ......................dry roasted oats ( powdered)
1 cup.......................besan
1tsp.........................baking powder
1 pinch...................baking soda
1 tbsp........................ginger garlic paste
1tbsp..........................dhana jeera powder
1tbsp.........................green chilly paste
1tsp...........................haldi powder
salt
water

Method :

Wash and pick the leaves of methi .
Cut them and add all the above ingredients.
Knead a firm but soft dough using little or no water at all.
Make small elongated balls and steam them in a pressure cooker without pressure for 20 minutes.
Prepare a tempering with oil , mustard seeds and sesame seeds and pour over the steamed muthias.
Serve hot with chutmey or a ketchup.

Eggless Banana Oats Muffins

Bananas as you all know are very perishable and have to be consumed within 2 to 3 days of purchase. Since it is mango season I had some bananas in the kitchen which were out of demand and so decided to do somthing so that they get finished easily.
This easy and simple cake is nutririous and eggless. The addition of oats and wheat flour also makes it a healthier option for afternoon snack as well as for breakfast.
Instead of chocolate chips you can also add any other nuts or dry fruits of your choice.
After making the cake it vanished so fast that everyone regretted having only three bananas left
and wished I had made some more.

Ingredients :

3 ....................ripe bananas
1/2 cup ..............oats
1/2 cup ...........oats ( ground to powder)
1/2 cup.............wheat flour
3/4 cup ............sugar
1 1/2 cup................curds
1/3 cup ................vegetable oil
1 tsp................baking powder
1/2 tsp.............baking soda
1/2 tsp..............vanilla essence
2tbsp................chocolate chips

Method:

Till the oven is getting heated start with the following.
In a bowl add oats, ground oats, wheat flour, soyabean flour, and mix well.
In another bowl add 3 mashed ripe bananas, sugar, curds, vanilla essence and 1/3 cup
vegetable oil and mix well .
Keep aside for 1/2 an hour.
Preheat the oven for 15 minutes at 180 degrees celcius.
Now add the baking powder and soda and mix well to the banana curd mixture.
Also add the dry ingredients from the first bowl and gently fold everything taking care not to overmix .
Grease a cake or muffin tin and dust it with wheat flour and pour this mixture in it.
Sprinkle chocolate chips on top .

Bake at 180 degrees celsius for 25 minutes in cake tin and 8 to 10 minutes in muffin tin.

Oats and wheat erappe (Paniyaram)

I prepared these erappe for the morning breakfast . A simple breakfast to energise you to start the hectic schedule ahead . Lately I have started using oats regularly in our diet. I make it a point to add oats to any dosa, idli, thalipit or even paratha dish. The dish becomes soft and nutrional too.

Linking this to.nithubala's event  kids-lunch-box  hosted by latha and lets-cook-18-starters-appetizers by radhika from ticklingpalates. The entry is also off to Akila's event dish-name-starts-with-o

Ingredients :

1 cup ..............Oats
1 cup................Wheat flour
1 cup.................semolina (rawa)
2 tsp................cumin (optional)
salt.

Method :

Mix all the ingredients with enough water.
The batter should be of the consistency of idli.
Keep it aside atleast for 4 to 6 hours.
This ensures the fermentation and the erappe become fluffy and soft.

Heat the erappe maker and pour spoonful of the batter .
You will need to brush the erappe maker with oil if it is not non stick.
Cover with a plate.
The erappe will swell up in 5 minutes.

Turn them and cook the other side.
Serve with any chutney of your choice.
