Dry Fruit Parfait (Thandai Flavor)


Parfait is a delicious dessert made of layers of sweetened yogurt and fruits. Though it sounds as a very fancy dessert it is one of the simplest desserts ever known.

The yogurt is sweetened by adding powdered sugar just the way we make it for our own Dahi Wada and then just let your imagination run wild . You can combine it with any fruit or jam or dry fruits that you fancy.

When  Kalyani  declared this months  magic-mingle   ingredients to be yogurt and fennel, I thought of thandai which is a very popular drink of Northern India and hence decided to try out this parfait with the thandai flavor.

The result was this simplest and yummiest dessert which we all thoroughly enjoyed and have decided to make it again in this summer.







Ingredients :

250gm ....................thick curds
4 tbsp.....................sugar ( powdered)
4 tbsp....................black currants (dry)
5 to 6 .................dry figs ( chopped)
4tbsp......................walnuts ( roughly crushed )
8 to 10..................plain waffle biscuits


For the Thandai masala :

2 tsp.................fennel seeds (saunf)
2 tsp................poppy seeds (khuskhus)
1/2 tsp..............pepper corns
4 to 5 ...............cardamoms ( only the seeds)
2 tbsp...............almonds






Method :

Soak all the things given in thandai masala in warm water for at least 2 hours.
Grind this to a smooth paste .
Soak separately black currants and figs in water.
Roughly break the waffles to pieces.
Whisk sugar ,curds and 3/4 th of  the ground thandai masala till smooth and chill it in the fridge .
Mix black currants, chopped figs and walnuts with remaining 1/4 the thandai and chill in the fridge.
While serving take individual glasses or bowls and add 2 tbsp of curd in it.
Now spread 1tbsp of fruit and nut mixture  and some waffle pieces.
Repeat the curd and nut layer twice more and serve chilled topped with waffles .
