Stuffed Bananas ( भरली केळी )

This delicious sweet dish is a speciality of CKP community of Mumbai .
Bananas used in this dish is a special variety called rajali ( राजाळी ) .
These bananas are thick stout and reddish in colour and have a grainy texture .
If this variety is not available in your area you can also use the long yellow South Indian bananas .

Ingredients -

3 .......................... Rajali bananas
1 bowl ................. grated fresh coconut
3/4 bowl ..............grated jaggery
1 bowl ................. thick coconut milk ( grind grated coconut and extract the juice )
3/4 tb sp ...............ghee
1/2 t sp ................ cardamom pd
1 tsp .................... almond and pistachio slivers

Method -

In a non stick pan add 1 tb sp ghee , grated coconut and jaggery and cook on a low flame till the jaggery melts .

Stir nicely and when the mixture becomes dry and sticky add cardamom pd and switch off the gas .

This is the stuffing for bananas .

Now peel the bananas and keep the peel aside .

Cut the bananas into 2 inch pieces and give them two diagonal vertical cuts keeping the piece intact .

Stuff these cuts with the coconut jaggery filling .

Now in a pan add little ghee and saute the bananas carefully for 2/3 minutes till they are golden brown on all sides .

Now remove the bananas from the pan and arrange the peels at the bottom of the pan .

On the peels arrange the sauted bananas .

Pour on them the thick coconut milk and if the some coconut filling is left that too sprinkle on top .

Cover the pan with the lid and cook on low flame for 10 minutes .

Move the bananas upside down and let the other side too cook for further 10 mintues .

When cooked sprinkle the almond pistachio slivers and decorate .

You can have this delicious sweet hot or cold as per you liking .

The peels at the bottom of the pan prevent the bananas from burning .

These crispy sweetish banana peels also taste yummy .

Kluai Nam Wa - Bananas In Coconut Milk - A Thai Dessert

I love to try dishes from various Indian States as well as from other countries. This is the reason why I joined International Food Challenge a lovely group by two lovely blogger Saras and Shobana . In this group every month we are given selected recipes from any one country by that month's host.

Our this month's host is Sangeetha Priya and she has suggested some wonderful n yummy recipes from Thai Cuisine.

I selected this easy n delicious dessert called  Kluai Nam Wa which in simple english means Bananas in Coconut Milk.

This simple dessert is unbelievably yummy and the coconut milk lends it a beautiful flavor and aroma.
Maharashtrians have a similar dish called Kelyache Shikran  (bananas in sweet milk ).

But this Thai dessert is equally easy n yet exotic.

Loved the dessert Sangeetha .

Ingredients :

2 ...........................bananas
2 cups....................freshly scraped coconut
1 cup ...................warm water
1/2 cup.................jaggery
1/2 tsp...................cardamom powder
a pinch.................salt

Method :

Wash the bananas and peel them.

Cut the bananas into round slices.

Grind together scraped coconut and warm water.

Squeeze out the juice of coconut and again grind with warm water.

Again repeat and take out the juice of coconut.

Mix both the juices and add jaggery and salt to it.

Boil this on a low to medium flame till somewhat thick .

Add cut bananas and further cook for 5 to 10 minutes.

Sprinkle cardamom powder .

Serve chilled.

Note :

The coconut left after extracting juice can be used in chutney for idli / dosas.

Banoffee Pie

Yesterday I posted the recipe of one of the very popular bengali sweets Chum-Chum for Sweet Fantasy Club ( SFC ) a group started by Preeti Garg of Simplytadka.Com . And today it is the turn of yet another popular and easy dessert called Banoffee Pie .

This is a very easy dish. The only time consuming part being cooking the milkmaid tin in boiling water for almost 2 hours. But then when you open the tin you understand that your efforts were worth the wait. If the toffee inside was not meant to be used in this dessert my husband and son would have happily finished off the whole tin, as the toffee which gets prepared inside is so delcious. I literally had to keep the toffee away from their hunting eyes so that I could use it in the dessert . Off couse they did manage to eat few spoonfuls of it anyways.

If you don't want to use the whole tin then make the toffee and keep the remaining  in fridge in an airtight container for future use - i.e if you have the guarantee that it would stay safe from the eyes of your family members.

Thanks Preeti once again for this amazingly wonderful dessert. In fact we loved it so much that I made it thrice on different occasions .

Ingredients :

( makes 10 to 12 medium sized bowls )

2 packs..................Digestive Marie biscuits
1/4 to 1/2 cup.........melted amul butter
1 tin .....................milkmaid
6 ........................bananas ( peeled and sliced)
6 cup.................whipped fresh cream
3 to 4  tbsp.................chocolate shavings
few.......................walnuts
2 tbsp..................cocoa powder

Method :

Take a big vessel filled with water and boil it.

When water starts boiling immerse the milkmaid tin completely in it .

Continue boiling for almost 2 hours or more.

After 2 hours take the tin out and let it cool completely to room temperature.

Open the tin and you will find that the milk inside has become golden brown and thick like caramel .

This is called toffe and we are going to use this as a second layer for our pie.

Now let's start making our  first i.e the bottom most layer .

Put the marie biscuits in a plastic bag and crush them coarsely with a rolling pin .

Now add the  butter and mix both with your finger tips.

The texture of the  mixture should resemble bread crumbs.

Take 10 bowls or ramekins if you want to bake .

I did not bake the base and still the dessert was equally sinful.

Distribute the crumbled mixture evenly in all the bowls and press with the back of the spoon.

Actually your fingers do the job better.

Now if your are going to bake then put the ramekins in oven and bake at 180 degrees for 10 minutes.

Or else just keep the bowls in fridge and chill for 2 hours.

After two hours take out the bowls and distribute the milkmaid toffee equally in all the bowls.

Spread it evenly and then arrange the sliced bananas on it.

On top of the slices put spoonful of fresh whipped cream and chill till serving time.

While serving sprinkle cocoa powder , chocolate shavings and decorate with walnut halves.

Banana Walnut Loaf

Normally my house is well stalked with bananas as we are regular banana eaters. So often it happens that the bananas go overripe and I have to think ways to put them to better use.

At such times various recipes of banana  cakes, shakes and other desserts made with banana come handy . This banana loaf is one such easy recipe where you can never go wrong.

I have made this cake so many times only with semolina and bananas and other variations too like using soya flour or adding buttermilk and still always got a moist and soft cake.

This time however I used wheat flour and crushed walnuts and that made the cake extra soft and yummy. The coconut also imparts a lovely flavor to the cake.

You will always find this recipe handy if wanting to put your ripe bananas to a good and healthy use.

Ingredients :

2 cups .....................wheat flour
1/2 cup...................semolina
1/2 cup....................sugar
3 .............................very ripe bananas
1/2 cup ...................freshly grated coconut
2 tbsp.....................melted unsalted butter
1 tsp.......................baking powder
1/4 tsp...................baking soda
3 tbsp....................crushed walnuts
3/4 cup................milk
1 tsp...................cardamom powder

Method :

Mash the bananas roughly .

Mix the flour, semolina and add all other items and mix well .

Keep aside for 1 hour .

Before keeping in the oven add baking powder and baking soda and again mix very well.

Bake in a preheated oven at 180 degrees for 30 to 40 minutes .

Check by inserting a toothpick, If it comes out clean the loaf is done.

Banana Oats Milkshake

I love to have shakes and juices and mocktails . But my idea to have them till now was  to enjoy these refreshing drinks in the evening or at night with one meal dish at leisure .

Though recently I have started preparing them in the morning for my son who leaves college early . So because of him we all are also getting into the habit of having these drinks in the morning as a part of our breakfast, and I am amazed at the diffrence in my energy levels due to this.

Since I have made them a regular during breakfast I have become more active and  enthusiastic and so would recommend all to start this healthy practice at home.

Today I had made this lovely banana milkshake with oats and dates . It was deliciously filling and we enjoyed it thoroughly.

Ingredients :

1 no..................ripe but firm banana
2 tbsp...............roasted and powdered oats
2 cups ..............milk
4 no..................dates
1 tbsp...............crushed walnuts

Method :

Blend everything except walnuts in a blender to a smooth consistency.
You can add more milk if you like.
While serving top with crushed walnuts.
