Tofu Kabab


I usually make these kababs with paneer but today I decided to substituted paneer with tofu ( a paneer made from soya bean milk ).This kabab dish is very easy to make and is a sure shot winner at get togethers. You can make all the preparations in advance . Just frying has to be done before serving. These minty kababs taste good with green chutney or tomato ketchup or even with any curd dressing.

 I am posting this today for  vegan-thursdays an event by Priya Suresh where we post a vegan dish on first and last thursdays of each month.








Ingredients :

150 gm ......................tofu ( soya paneer)
2 to 3 ......................boiled potatoes ( peeled and mashed )
2 to 3 tbsp...............cornflour
1 small cup..............fresh Pudina/ Mint ( very finely chopped )
2 ...........................green chillies ( very finely chopped)
1 tbsp....................raisins and cashew pieces
1 tsp......................sugar
1/2 tsp...................garam masala
salt
Oil for deep frying







Method :

Mix everything except the raisins and cashew pieces.

Make lemon sized balls and flatten them with your palm.

Deep fry in hot oil till golden in colour .

Dust the kababs lightly with cornflour if you want.

Serve hot with pudina chutney .

Jewish Vegan Challah


Made this challah ( a type of Jewish Bread ) with onion soup and that was our lunch  few days back . As many must be knowing that  I am part of a group called HBC ( home-bakers-challenge)  an event started by Priya Suresh . In this event for the month of December we were given many interesting options by  Priya Ranjit  host of this month's .

 One of them was this Vegan Challah .  I have already made these lovely american-sugar-cookies  for the event and just couldn't resist trying out this Vegan Challah because it was made using Chick pea flour. This sounded very weird and interesting at the same time .

So planned to give it a try and I was really surprised with the resulting bread. The challah was perfectly soft very tasty.

 This Challah is the perfect entry for today's vegan-thursdays  where few of us bloggers post a Vegan recipe on the first and last thursday of the month .

Ingredients :

1/2 cup.................. besan ( gram flour ) + 1/2 cup water
4 cups..................maida ( all purpose flour )
1/4 cup .................sugar
1 cup.....................water
1 n 1/2 tsp ..............dry active yeast
1/4 cup...................ground nut oil
salt







Method :


In a bowl mix yeast, 1 tsp sugar and 1 cup warm water and let it rest for 10 minutes.

The yeast mixture will rise and become foamy.

If the mixture doesn't rise means the yeast is not active and you will have to start again with new yeast.

Meanwhile in a blender blend besan and water till very frothy.

Add oil to it and continue to blend.

Now add the foamy yeast mixture and blend well.

Take this in a big bowl and gradully add maida to this mixture.

Continue kneading till all the maida is over.

Now knead for 8 to 10 more minutes till the dough is soft and non - sticky.

You may add some more maida to get the right texture. ( I had to use 2 to 3 extra spoons)

Oil the dough and keep it in a greased big bowl and let it rise for one hour .

Use a very big bowl and the dough rises considerably.

After one hour punch the dough and again let it rise for 30 minutes.

Now make three equal parts of the dough and roll them into 12 inch long strands.
Lay them straight and make a braid shape with these three strands.


Lift this braided dough and keep it in greased tin .

Brush the surface with milk and let the dough rise again for 45 minutes.






Bake in a preheated oven for half an hour or till the surface is firm and golden in color.

Serve with jam , chutney or even with a warm soup like I did.

Batata Sambhar Talasan ( Potato Stir Fry with Sambhar Masala )

This simple potato stir fry in unbelievably delicious and a perfect tiffin recipe . It gets prepared in minutes and whenever I am having busy schedule I end up making this dish for my husband's tiffin, since he loved it.

Addition of sambhar masala with tamarind pulp gives this stir fry a twist which leaves you wanting more.
It tastes yummy with a simple vegetarian lunch .

Ingredients :

4 to 5 ........................potatoes
2 onions ................... finely chopped
1/4 tsp....................chilly powder
1/4 tsp...................asefoetida
1 tbsp or more......smabhar masala ( South Indian)
1 tbsp..................jaggery
1 tbsp...................tamarind pulp
2 tbsp..................oil
salt


Method :

Peel and cut the potatoes into cubes.

Heat oil and saute the onion for 5 minutes.

Add potatoes and stir till half cooked.

Add all the masalas, jaggery, tamarind pulp and salt.

Cover the lid on the the pan and cook till done.

This is a perfect tiffin recipe with rotis and also with daal rice.

Apple Kiwi Smoothie

When the sweet juicy apples combine with the tangy sour Kiwi what you get is this  heavenly delicious smoothie . This smoothie instantly refreshes you and gives the packed energy required for starting your day.

So what are you waiting for ? Try out this simple yummy smoothie for breakfast . It will give you the much needed boost to deal with for the entire day.

By now you all must be aware that we , a group of blogger friends post Vegan entries on every first and last thursday . So I have made this smoothie as my today's entry for the Vegan Thursdays an event started by priya .





Ingredients :

2 ....................big juicy apples
1....................Kiwi
sugar if needed
water


Method :

Wash and cube the apples keeping the skin on.

Peel the Kiwi and cube it.

Now in a processor add both the fruits and make a smoothie.

You can add sugar if you want.

If the smoothie is too thick add water to dilute it.

Papad Kismur

On every first and last thursday of the month I post a vegan dish for Priya's vegan-thursdays. Though I missed out the last thursday of October as I was busy in Diwali preparations.

 So here is my dish for today. This is a very simple and easy to make side dish which goes perfectly with daal rice . After all the heavy and rich food during Diwali this dish will surely give you satisfaction of pure simple homely food.






Ingredients :

8 to 10........................Papads
1 large......................onion (very finely chopped )
1 cup.......................grated coconut
1 tsp.......................chilly powder
1 tsp.......................sugar (crushed to powder)
salt if needed
chopped coriander to garnish



Method :

Dry roast the papads.

Crush them roughly.

Add all the above ingredients and immediately serve.

This kismur tastes great with hot dal rice along with a pickle at side.

Rice Cutlets

We usually take care to make fresh food daily as per the requirements of our family. But still sometimes due to parties or occasions some extra food remains and you just keep on wondering how to use it in the best possible way.

Most of times it so happens with me that I can perfectly judge the quantity of all the other dishes to be prepared but always goof up with the amount of  rice and rotis which I make. Since we are rice eaters I feel that people will go for rice and since nowadays people tend to avoid rice for weight controlling reasons I feel they will go for chapatis. And finally I end up making both in excess.

 It is at such times that this cutlet dish comes to my help. I make it the following morning for breakfast and all the extra rice gets over without any murmurs or fussiness from the family .

These tasty cutlets can be made without any special ingredients and you can even add some veggies like minced carrots, french beans, cabbage if you want to. Off course you can use freshly cooked rice too for this purpose but the leftover rice gives better texture to these cutlets. So if you don't have any leftover rice , cook rice in advance and make the cutlets after 5 to 6 hours.

Ingredients :

2 cups ...................leftover cooked rice
1 .........................onion ( finely chopped )
1 ........................boiled potato ( skinned and mashed)
2 .......................green chillies finely chopped
2 tbsp................finely chopped coriander leaves
1/2 tsp................sugar
1/2 tsp.................garam masala
1/2 tsp................amchoor ( dry mango powder)
oil for shallow frying
salt



Method :

Mix all the above items except oil and mash them very well.

Make lemon sized balls.

Take a non stick tawa and smear it with very little oil.

Press the balls with your palms into cutlet shapes.

Shallow fry them till golden and crispy on both the sides.

Serve with any chutney or ketchup of your choice.

Chinese Vegetable Stir Fry ( Vegan - Thursdays )


Nowadays we all are aware of the the importance of vegetables in our diet. To include fruits and vegetables of different colours is the need of the day as they provide us variety of  vitamins n nutrients .

For e.g  red colour in fruits n vegetables means they are rich in lycopene , whereas orange colour is an indicator of the presence of  beta-carotene. Greens are rich in chlorophyll and purple coloured food gives us Vit - C.

So make sure to have at least 2 to 3 different coloured fruits and vegetables daily to keep fit.
This simple and colourful stir fry can be made with any combinations that you like. Just make sure to include as many different colours as possible .

This stir fry is very easy to make and can be had with noodles, rotis or even pulavs. Even kids who are otherwise fussy over eating vegetables enjoy this dish due to its chinese way of preparation.

Today also being the last thursday of the month I am posting this super nutritious dish for our  vegan-thursdays  a theme started by Priya


Ingredients :

100 gms ..............................french beans
100 gms..............................capsicum
2.....................................carrots
10 to 15 ...........................garlic flakes
1 tbsp...............................pepper powder
1 tbsp..........................soy sauce
1 tbsp.........................oil
salt







Method :

Wash the vegetables thoroughly.

String the beans and cut them into thin long stripes.

Cut the capsicum and carrots also in a similar way.

Heat  oil in a pan and add crushed garlic flakes .

When the garlic becomes crisp and golden add carrots.

Keep the flame high and stir constantly.

Add soy sauce .

After 2  minutes add french beans and continue stirring for 5 more minutes.

Add pepper powder and salt.

At the time of serving add capsicum and cook just for 2 minutes.

Try to maintain the crispiness of the vegetables as much as possible.

Serve hot with rotis or rice.

Rawa Bharli Bhendi ( Lady fingers stuffed with spicy semolina)

Bhendi or Ladys fingers is a favourite of many including me and I like to make different varieties using this versatile vegetable. But usually I like bhendi in crisp form and so this particular bharli bhendi is my personal favorite.

This is a very simple and interesting recipe where in a mixture of semolina and spices is stuffed in the ladys fingers and then they are arranged in thick flat bottomed pan and cooked till crisp on both sides.

Take care to cook on slow flame and dont turn them again and again as the  stuffing may spill out.

This dish tastes awesome with simple dal rice . This dish is my today's entry for the vegan-thursdays








Ingredients :

1/2 kg .................... Ladys fingers ( Bhendi)
1/2 cup....................Rawa ( Semolina)
2 tsp.......................chilly powder
1/2 tsp...................turmeric powder
1 tsp......................Garam masala
1tsp.......................Dry Mango powder ( Aam choor)
8 to 10.....................garlic cloves (crushed)
1 n 1/2 tsp............salt
1 tsp + 2 tbsp........oil


Method :

Wash and pat dry the Ladys fingers .
Cut the upper end of bhendi and make a slit in it so that you can stuff the rawa.
Take rawa , all the masalas , salt ,1 tsp oil and mix well.
Now stuff this mixture in the Ladys fingers.
Heat oil in a flat bottom pan and add the crushed garlic.
When the garlic becomes golden brown add the ladys fingers and arrange them on the pan.
Cover the lid and cook for 8 to 10 minutes on slow flame.
Now turn them and cook again for 5 to 6 minutes with lid covered.
The ladys fingers should be semi crispy .
Dont turn again and again as this would make the stuffing come out of it.
This dish goes very well with daal rice.

Thechleli Tendli Lasun Talasan ( Gherkins and Garlic Vegetable) and Announcing Vegan Thursdays


We a group of food bloggers started a new event and named it as "Vegan Thursday", This event starts from today .The main  motto of this event is to share vegan dishes from any cuisine. 

Most of our Indian foods is  vegan . Obviously most of our daily routine foods we make and eat is vegan without our knowledge.

Vegan food is prepared without the use of dairy products, eggs, and any animal derived substances like honey .So we a bunch of food bloggers will be showcasing our vegan foods during thursday's this event will be held twice a month. 

We will be posting the first week's Thursday and last week's Thursday of every month .


This vegan Thursday  don't have any theme and the choice of recipes prepared by each blogger being part of this event depends  upon their choice.

Today am starting  this thursday with a simple sabji made of gherkins (tendli) Today's recipe is totally vegan and free from any animal product . Hope you like it .



Tendli or gherkins is a tasty vegetable and can be prepared in many ways. But I like it best with minimum spices .

This tendli fry is one of the simplest dishes the only time consuming part being the crushing of the tendli. This process ensures that the taste of garlic is well infused with the vegetable and the result is very yummy.

Have this with simple daal chawal and enjoy the meal.


Ingredients :

1/2 kg..................Tendli
10 to 15 ...............garlic cloves
1 tsp...................chilly powder
1/2 tsp.................turmeric powder
2 to 3 tbsp .............oil
salt



Method :

Wash the tendli and crush it a bit by crushing stone on Khalbatta.
Also crush the garlic .




Heat oil in non stick pan and add the the crushed garlic.
When it becomes crisp and golden brown add the crushed tendli.
Add chilly , turmeric and salt .
Keep the gas on medium flame and keep on stirring occasionally .
Cood without covering the pan with a lid.
Normally this talasan requires the use of more oil, but I have used non stick pan and so
used much less oil than it requires.
Serve with daal rice of chapaties .
