Pumpkin leaves vegetable ( भोपळ्याच्या पाल्याची भाजी )

In maharashtra during the beginning of monsoons in the months of June July you get tender pumpkin leaves in the market . 
When I was small we had pumpkin creeper in our backyard . It was a pleasure to go in the garden and gather the tender pumpkin leaves and buds . Yes we do make tasty dish with pumpkin buds too . Will post that recipe also sometime soon . 
So today I made this simple yet very healthy and delicious stir fry with pumpkin leaves . 

Ingredients :

1 bunch ........................Tender Pumpkin leaves
200 gms ....................pumpkin
2 ..............................onions (finely chopped)
1 tsp........................mustard seeds
3 ..............................green chillies
1 tbsp........................jaggery
२ to 3 ........................dry kokam pieces (sola in konkani)
1 tsp..........................turmeric powder
1 tbsp......................karwari sambar masala.
2 tbsp.........................oil
salt



Method :

Pick the tender leaves of pumpkin and chop them finely.

Peel the pumpkin and cut it into medium cubes.

Heat oil in a pan and add mustard seeds.

When they splutter add chillies and onions and saute till transparent.

Now add turmeric powder, chopped leaves, jaggery, kokam and salt.

Cook covered with a lid for 10 minutes.

Add the pumpkin pieces and cook further till they are just cooked.

Add sambar masala.

Serve with rotis or daal rice .

पावसाळ्याच्या सुरुवातीला जून जुलै च्या महिन्यात महाराष्ट्रात बाजारात भोपळ्याच्या वेलीची पाने दिसू लागतात .
माझ्या लहानपणी आपल्या मागच्या अंगणात भोपळ्याची वेल होती .
रोज सकाळी जावून वेलीवरची कोवळी पाने , भोपळ्याच्या कळ्या खुडताना खूप मजा वाटायची .
भोपळ्याच्या कळ्यांचे देखील अतिशय चविष्ट पदार्थ बनवले जातात .
त्यांच्याविषयी लवकरच लिहीन .
आज मात्र मी बनवायला अतिशय सोपी पण अतिशय चविष्ट आणि पौष्टिक अशा भोपळ्याच्या पाल्याच्या भाजीची कृती देत आहे .


साहित्य  :


१ जुडी - भोपळ्याची कोवळी पाने
२०० ग्राम - लाल भोपळा
२ - कांदे बारीक चिरून
१ टी स्पू - मोहरी
२/३ - हिरव्या मिरच्या
सुपारी एवढा गुळ
२/३ आमसुले
१ टी स्पू - हळद
१ टे स्पू - कारवारी सांबार मसाला
२ टे स्पू - तेल
चवीनुसार मीठ



कृती : 

भोपळ्याची कोवळी पाने स्वच्छ धुवून बारीक चिरावीत .

लाल भोपळ्याची साल काढून त्याच्याही मध्यम फोडी कराव्यात .

कढईत तेल गरम करून मोहिरीची फोडणी करावी .

त्यात हिरव्या मिरच्या उभ्या चिरून आणि कांदा घालून सोनेरी होईतो परतावे .

मग हळद , चिरलेली पाने , गुळ , आमसुले आणि मीठ घालावे .

झाकण ठेवून ५ मिनिट भाजी शिजवावी .

मग त्यात भोपळ्याच्या फोडी घालून परत भाजी नीट शिजवावी .

शेवटी सांबार मसाला घालून नीट ढवळून भाजी शेगडीवरून उतरवावी .

चपात्या किंवा डाळ भाता बरोबर हि भाजी खूप छान लागते .

Pumpkin Pulusu



Today I am posting a very delicious pumpkin dish which goes perfectly well with rotis or plain hot rice. Its called pulusu which is a sweet n sour curry much like rasam. This is my remake dish for  the remake of potluck-party-cyber-style an event by jagruti where this month I was paired with tahemeem shaik .


The original recipe calls for Butternut Squash , but as it is not easily available here I used pumpkin which is very similar to it. This pulusu was liked by all my family members and was finished at one go.

Ingredients :

1/4 kg .................pumpkin ( washed , peeled and cubed )
1/4 tsp..................mustard seeds
1/4 tsp................cumin seeds
2 .....................dry red chillies ( broken)
1 sprig..............curry leaves ( chopped)
1 ....................onion ( finely chopped)
4 to 5 .............garlic cloves ( finely chopped )
1....................tomato ( chopped )
2 tbsp..............oil
1 / 2 tsp............turmeric pd
1/2 tsp..............chilly powder
lemon sized ......tamarind ( soak in warm water and extract juice)
2 tbsp................jaggery
salt


Method :


Heat oil and add first four ingredients.

After they splutter add onion and garlic chopped and saute till soft.

Now add chilly powder, haldi, tamarind juice and jagerry.

Stir for a minute and add tomato chopped.

Cook for 2 minutes and add 1 cup water and give the mixture a boil.

In the end add cubed pumpkin and cook till tender but firm.

This should take 5 to 8 minutes.

This tastes yummy with rotis or hot plain rice and pickle.

Pumpkin Truffle Pops ( For Groovy Gourmets)


As every one is aware this is the month of Halloween and so Groovy Gourmets selected Halloween treats as the  theme for this month.

We were supposed to prepare somthing spooky for the event and I tried making these pops. Though I tried hard to make the faces scary I somehow ended up with these funny n cute looking faces and loved them popping in our mouth.

 As Halloween is incomplete without pumpkin treats I decided to make this pops with pumpkin. These Pumpkin pops are very easy to make and a great  fun to have for both kids as well as adults.

They taste very delicious and can be kept for few days in fridge.









Ingredients :

1/2 cup................pumpkin puree
1pack...................digestive biscuits ( I used digestive marie )
1/2 cup..................instant milk powder( I used Nestle)
1/4 cup..................sugar
1/4 tsp..................nutmeg powder
1/4 tsp.................cinammon powder

Chocolate Cover :

100 gm ................bitter chocolate ( Used Morde brand)
2 tbsp..................coffee powder
2 tbsp..................sugar
1 tbsp..................unsalted butter



Method for the pops :

Grind together marie biscuits, sugar and milk powder .

Add the puree, cinammon powder and nutmeg powder to it.

Now grease your palms with little butter and make small lemon sized balls of this mixture.

Keep the balls in fridge for about 1 hour .

Mine were in fridge for almost whole day.





Method for the chocolate sauce :

In a thick bottomed small vessel mix all the ingredients given for sauce.

Keep them stirring continuously on a slow flame .

Let the chocolate melt and coffee powder mix properly.

Remove from gas when thick and cool it.

Dip the chilled pops in this sauce and again keep them in fridge.

You can have these yummy pops as they are or can make eyes or mouth with icing if you want.

Pumpkin Oats Mummy Cupcakes ( for Home Bakers)

Hi everybody,

All of us know that October is celebrated as a Halloween month in many parts of the world  . So undoubtedly our this month's challenge for Home Bakers were some spooky and scary dishes like Mummy Cupcakes, Spooky Witch Finger Cookies and Pumpkin Cookies .

 I made the cup cakes for this event which is started by Priya Suresh  and hosted for this month by Nalini Suresh .

 Though I would have loved to try Witch Fingers I didn't get enough time to make them, but if possible planning to make them in future. The cupcakes were soft , moist and fun to have.....




Ingredients :

1 cup ................Pumpkin puree
1 cup.................oats
1 cup................wheat flour
1/2 cup .............any vegetable oil
3/4 cup..............sugar
1 tsp..................baking powder
1/4 tsp................baking soda
1/4 cup...............milk


Method  for Cupcakes :

Mix all the dry ingredients very well in a bowl.

Mix all the wet ingredients also very well in a separate bowl.

Now add the dry mixture in bowl with wet ingredients and fold gently till just mixed.

Spoon out in greased cupcake moulds.

Bake at 180 degrees for 15 to 20 minutes in a preheated oven.







Icing :

1 cup .....................fresh cream ( I used Rich brand )
1/3 cup.................icing sugar
few.......................choco chips


Method :

Whip the cream and sugar till very stiff.

Put it in a plastic bag and cut a small slit at the bottom of the bag.

Now carefully pipe out the ribbon shapes horizontally on the cupcakes.

Leave the middle of the cup cake blank.

Put two dots of cream in the middle and top them with choco chips for the eyes.

Spicy Pumpkin Soup (Italian Style )

Today is 10th of the month and as decided the members of  Potluck party are celebrating a virtual party at their space. This is a brain child of  Jagruti and anyone interested can get more details from  here .

I have made a Spicy Hot  Pumpkin Soup for this party and hope that all the other members enjoy having this hot soup with the hot gossip .

This soup is very comforting to have and in itself is a whole meal if had with toasted bread.

Ingredients :

1/4 Kg .......................Pumpkin
1/2 cup......................chana dall
1.....................onion (finely chopped)
2 to 3................garlic cloves ( crushed)
1 tsp .....................green chilly and ginger (finely chopped )
1tsp.......................cumin seeds (crushed)
1tsp.......................oregano
2tsp......................lemon juice
2 tbsp....................olive oil
salt

For the Garnish :

2 tbsp..........................pumpkin seeds
few.........................fried onion rings (bought readymade from hot chips)
2 tbsp...................finely chopped coriander leaves






Method :

Remove the skin and seeds of the pumpkin and cut into big pieces.
Wash and soak the chana daal in water for at least 2 hours.
Boil the pumpkin and chana daal together in pressure cooker till soft.
Grind the above and make a smooth puree.
In a pan heat the olive oil and add the onions.
When onions become golden add crushed garlic, chilly and ginger and saute for 2 minutes.
Now add crushed cumin seeds and oregano and again saute till it gives out lovely aroma.
Now add the pumpkin and dall puree, lemon juice and salt and boil .
Serve hot garnished with coriander leaves, pumpkin seeds and the fried onion rings.

Soup can also be served with fried bread croutons instead of onion rings.
