Guchi Matar ka Pulav

Prawns Pulav ( कोलंबी भात )


English

Delicious pulav made with prawns and basmati rice .

Use of less spices and coconut milk gives this pulav a very mild and  aromatic flavour .

Serve it hot, garnished with fresh chopped coriander leaves .


Ingredients :

1 cup......................white prawns ( shelled and thread removed)
2 cups.....................basmati rice
1........................onions ( finely chopped)
2 tbsp.................ginger garlic paste
1 tbsp.................red chilly powder
1 tsp...................turmeric powder
1/2 tsp.................. garam masala ( only cloves, cardamom and cinnamon)
1 tsp.....................dhana jeera powder
1 cup....................coconut milk
3 cups ...................water
2 tbsp...................oil
fistful....................coriander leaves ( chopped)









Method :

Remove the shells of the prawns and the black thick thread inside.

Wash them thoroughly .

Apply all dry masalas, ginger garlic paste and salt and marinate the prawns for 1 hour.

In a non stick vessel add oil and saute onions till golden in color.

Add marinated prawns and stir fry till all the water evaporates.

Remove the prawns and in same oil add washed basmati rice and stir fry it.

The rice grains give out nice aroma after 5/10 minutes.

Now again add the prawns , coconut milk and water and cook till done on  slow flame.

Cover the lid and cook for around 20 to 30 minutes.

While serving add the chopped coriander leaves and served with roasted papad and raita.


मराठी 

कोलंबी आणि बासमती तांदळाचा स्वादिष्ट पुलाव .
कमी मसाले आणि नारळाच्या दुधामुळे हा पुलाव कमी मसालेदार आणि रुचकर होतो .
वरून बारीक चिरलेली कोथिंबीर पेरून गरमा गरम कोलंबी पुलाव वाढा .


साहित्य : 

१ कप ......................सफेद पाण्यातील कोलंबी ( कवच सोलून आणि आतील काळा दोरा काढून )
२ कप .....................बासमती तांदूळ
१  ........................कांदा ( बारीक चिरून )
२ टे स्पू ................. आले लसून पेस्ट
१ टे स्पू ................. लाल तिखट
१ टी स्पू ...................हळद
१/२ टी स्पू .................. गरम मसाला ( फक्त लवंग , दालचीनी आणि वेलची पावडर  )
1 टी स्पू ....................dhana jeera powder
१ कप .................... नारळाच दूध
३ कप  .................. पाणी
2  टे स्पू ................... तेल
मुठभर ................... कोथिंबीर ( बारीक चिरून )

कृती :


कोलंबीचे कवच काढून मधला काळा दोरा काढून कोलंबी स्वच्छ धुवून घ्यावी .

कोलंबीला हळद , लाल तिखट , गरम मसाला , आले लसून पेस्ट  आणि मीठ लावून १ तासभर ठेवावी .

एका नॉन स्टीक भांड्यात तेल गरम करून कांदा सोनेरी रंगावर परतून घ्यावा .

मग कोलंबी घालून सगळे पाणी आटे पर्यंत नीट परतावे .

मग परतवलेली कोलंबी बाजूला काढून त्याचं तेलात नीट धुतलेला बासमती तांदूळ परतावा .

५ / १० मिनिटांनी तांदळाचा खमंग वास आला की कोलंबी , नारळाच दूध आणि पाणी घालून नीट ढवळावे .

वरून झाकण ठेवून २0 ते ३० मिनिटे पुलाव शिजवावा .

गरमा गरम पुलाव वाढताना वरून बारीक चिरलेली कोथिंबीर पेरावी आणि सोबत पापड आणि रायते वाढावे .

Chettinad Vegetable Biryani - ( Indian Cooking Challenge )

This month for the Indian Cooking Challenge   an event started by  Srivalli  we are making a very popular vegetable biryani from Chettinad . Chettinad cuisine is very spicy and yummy . The biryani is very delicious and has lovely flavour.






Ingredients :


2/3.....................bay leaves
2 " ....................cinnamon
3 .......................cardamoms
4 ......................cloves
1.....................star anise
2 tbsp..............ghee
2 cups .....................mix vegetables( carrots, peas, beans , cauliflower )
2 cups ....................rice
3 ............................onion ( chopped )
2 ..........................tomatoes ( chopped )
2 tbsp................. chilly garlic ginger paste
1 tsp......................chilly powder
1 tsp........................turmerice powder
1 tsp......................coriander powder
3 tbsp ...................pudina leaves ( chopped)
3 tbsp..................coriander leaves ( chopped )
2 tbsp....................cashewnuts
2 tbsp...................ghee
salt
3 1/2 cups ...............water


Method : 


Wash the rice and soak it in water for 1/2 an hour.

In a cooker add 2 tbsp ghee and fry cashewnuts till golden and keep aside.

Add bay leaf, cardamom, cloves, cinnamon and star anise and saute for 1 minute.

Add onions and saute till golden and then add ginger garlic chilly paste and again saute.

Add chopped mint and coriander leaves  and chopped vegetables.

Stir for 5 minutes and then add tomatoes, all powders and mix well.

Strain out all the water from rice and add rice to the cooker.

Stir well add salt and add 3 1/2 cups water.

Cover with a lid and cook for ten minutes .

Now add 2 tbsp ghee and sprinkle cashewnuts .

Again cover the lid and now pressure cook till 3 to 4 whistles .

Mix well and serve with pickle, curd and raita.

Green Vegatable Pulav - need new photo n marathi rcp



Want to make something filling , nutritious and tasty ?  Then try this easy to make one meal dish. I have added carrots, sweet corn, french beans and cauliflower in this pulav . But you can surely add or omit the vegetables as per what is available in your kitchen . Serve this pulav hot with papad or boondi ka raita .








Ingredients :


1 cup....................fresh sweet corn / green peas
1 cup....................carrots ( washed and cubed)
1 cup....................french beans ( washed stringed and chopped)
1 cup....................cauliflower florets
1 cup....................onion ( chopped )
3 cups ................basmati or pulav rice ( washed and drained )
3 to 4 tbsp...........oil
salt







For the Green Masala :


fistful ......................fresh coriander leaves
6 to 8 .....................green chillies
5 to 6 ....................garlic cloves
1 inch....................ginger piece
2 to 3 ...................cloves
1/2 inch.................cinnamon
2 .........................cardamoms
7 to 8 ................pepper
1/2 tsp.................cumin seeds








Method :


Grind all the ingredients given under green masala without adding water and keep aside

Heat oil directly in the pressure cooker and add chopped onions.

Saute the onions till translucent and add all the vegetables one by one.

Saute them all till they are semi soft.

Now add the ground masala and saute till oil separates.

Finally add drained rice and again saute till rice is well coated with masala ( for 5 minutes)

Now add 5 cups hot water in the cooker and pressure cook the pulav to just 2 whistles.

Switch off the flames and let the rice be inside till the pressure goes down on its own.

This ensures that each rice grain separates and cooks properly.

Serve with pickle, papad and raita of your choice.

Vegetable Tawa Pulav ( For Potluck Cyberstyle )

Pulavs and biryanis are an inevitable part of Indian food and no party is complete without a rice dish. This Tawa Pulav which I have made  is a complete meal with variety of vegetables and tofu ( you can use paneer too ) . 

These vegetables and the tawa sabzi masala lends this pulav a superb aroma which simply is irresistible. You can also use pav bhaji masala in place of sabzi masala . Have it with a simple dahi raita or include this rich pulav in you party menu along with other special dishes.


 Today I made this for  Potluck Party by Jagruti 







Ingredients :

1/2 cup................carrots (cubed )
1/2 cup...............onions (cubed)
1/2 cup...............french beans (roughly chopped )
1/2 cup..............green peas
2 to 3 ...............mushrooms ( cubed)
1/2 cup..............tofu ( cubed)
4 to 5 ..............baby potatoes
2.......................tomatoes (chopped)
2 cups...............rice
2 tbsp...............Tawa sabzi masala (used ready made masala )
1tbsp...............garlic ( finely chopped)
1 tsp................chilly powder
1/2 tsp..............turmeric powder
2 to 3 tbsp.........oil
salt




Method :

Boil 4 cups water in a big pan with salt .

When the water boils add the rice and cook it.

Spread the cooked rice on a plate and let it cool.

Also boil carrots, french beans, peas and potatoes separately and keep aside.

On a curved tawa add oil and heat.

Add garlic and onions and stir fry continuously.

After 2 minutes add tomatoes and stir fry.

Add chilly powder, turmeric powder , tawa masala and salt.

Then add all the boiled vegetables and stir fry  for 2 more minutes.

Now add mushrooms and tofu  and stir well.

Remove this vegetable in a separate pan.

Now add 1 more tbsp oil and little tawa masala on the same tawa and stir fry
boiled rice on it.

Add the vegetables and carefully mix everything taking care not to break the tofu pieces.

Cover the pan and cook for 5 minutes .

Serve hot with raita , papad and achar.

Tamarind Rice ( For the Potluck Party )

Today is again that day of the month when we recreate our partners dish for the potluck-party-cyber-style .

This month I was paired with Pradnya of  pranuvisworld and got a chance to make one of the most popular dish of  South i.e Tamarind Rice also known as Puliyogare.

 So on an auspicious day like Krishnashtami I got a chance to post this most popular prasadam to be offered to the Lord .

 So off to this yummy recipe :






Ingredients :

2 cups....................... boiled cooked rice
1tbsp.........................tamarind soak in 1/4 cup warm water
1/2 tsp......................mustard seeds
1 pinch....................asefoetida
1/2 tsp....................chana daal
1/2 tsp....................urad daal
1/4 tsp....................methi seeds ( fenugreek)
few........................curry leaves
1/2 tsp...................turmeric powder
2 .........................green chillies ( slit in two )
2.........................dry chillies ( broken in pieces)
2 tbsp..................groundnuts
2 tbsp..................coconut oil ( can use any other oil too)
salt 

Method :

Heat 6 cups water  and when it starts boiling add the washed rice .

Cook for 10 to 12 minutes till the rice is just done and drain the water out.

Keep the rice aside.

Now extract tamarind pulp and strain it to remove the fibers.

Heat coconut oil in a pan and add mustard seeds, chana daal, urad daal and methi seeds.

When they crackle add green and red chillies, curry leaves and asefoetida .

Then add the groundnuts and saute well.

Now add turmeric powder , tamarind pulp and salt and saute well till oil separates.

In the end add the boiled rice and mix well.

Cook with covered lid for 5 mintues.

Serve it with a pickle or raita of your choice or even plain.

Methi Chana Pulav ( Potluck Remake )

I was actually supposed to post this dish last week but due to some personal reasons could not post it on time.

This was the dish made by Shobha for the potluck-party and I was paired with her for this month so I had to remake this entry.

So here I am with this yummy treat , the pulav was really very simple and delicious and we all loved it very much.









Ingredients :

1 cup...............basmati
1/4cup............chana dal
1/4 cup...........methi leaves ( chopped)
2..................green chillies (slit)
1tsp............garlic ( crushed)
1tsp...........ginger ( grated)
1 piece..........dalchini
3/4 .............cloves
2/3 ...........cardamoms
2/3............bay leaves
1 tsp..........shahjeera
1/4 tsp.........turmeric powder
1/2 tsp..........coriander powder
salt
oil

Method :

Soak chana daal overnight.
Wash the rice thoroughly and soak it for 10 minutes.
In a pan heat oil and add cardamom, cloves, dalchini and bay leaves.
Now add ginger, garlic, chillies and chopped methi leaves and saute.
Drain water from rice and add it to the pan, saute for 5 minutes.
Now add chana daal and again saute for 5 to 10 mintues.
Now add salt , haldi, dhana powder and 3 cups water and mix everything well.
Cover the pan with lid and cook.
When almost done add shahjeera and further cook till all the water is absorbed.

Methi Soya Pulav

When the  SYS  ingredients for May were declared as Fenugreek or Bottle Gourd I bought a fresh bunch of methi leaves and finally decided to make a flavorful rice dish with it adding some soya chunks to it.

 The pulav was very tasty and we had it with aloo sabji . But it can simply be had with raita and achaar too .

This pulav is full of calcium and protien and is good for growing children as well as pregnant women. It is one of the easiest pulav as it has minimum of ingredients.

 As it already has methi and soya usually no other sabji or daal is required with it.

Ingredients : 

1 cup..................soya chunks
1 bunch................fresh methi (fenugreek)
2 cups..................basmati rice
1 ........................onion ( chopped)
1 tbsp..................chilly ginger garlic paste
1 tsp....................garam masala ( powder of cloves, cardamom , cinnamon)
4 Tbsp ................oil
salt







Method : 

Boil water and add the soya chunks in it and cook for 10 minutes.
Keep them in the hot water for 15 minutes and then squeeze out the water.
Clean and pick the methi leaves and cut them.
Heat 1 tbsp oil in a non stick pan and saute the onions for 5 minutes.
Add the paste of chilly ginger garlic and saute for 5 more minutes.
Now add 1 more tbsp oil and  the methi leaves and saute till all the water evaporates.
Add the squeezed soya chunks and saute for 5 minutes.
Finally add 2 tbsp oil and washed and drained basmati rice and saute well for 5 more minutes.
Add 4 cups water, salt according to the taste and cook till done. ( for 15 to 20 minutes ) on slow flame.

Spring Onion Rice

Rice for us is very important and staple . and rice is used extensively for breakfasts, lunch, dinner and even to make the snacks. This spring onion rice is a simple twist given to jeera rice and thus an attmept to make it more tasty and nutritous.
Adding the green makes this rice version more healthy and a good company with any vegetable of non veg gravy.
I usually make this rice with non veg items so that indirectly we are able to consume some veggies also on that day.





Ingredients :

2 cups...................rice
1 bunch.................Spring onions
2 to 3 ...................green chillies (chopped finely)
1 tsp.....................cumin seeds ( jeera)
2 tsbp.....................ghee
salt




Method :

Wash the rice thoroughly and drain the water.
Wash and separately chop the onions and the greens .
Heat the ghee in a pan and add cumin seeds.
When they splutter add the chopped onions and saute till transparent.
Now add the rice and stir fry till all the grains are coated with ghee.
Now add the chopped greens and saute for 3 to 4 minutes.
Add 4 cups warm water  and salt and cook till done.
Enjoy it hot with any veg or non veg dish of your choice.

Brown Butter Pulav

This simple to make yet rich pulav goes well with almost all the dishes . It gives out a lovely fragrance of butter and is a hit during get togethers and parties.


Ingredients :

3 to 4 tbsp.....................Ghee
2 tbsp....................Butter ( I use Amul)
2 cups .................Basmati rice
2 inch.....................Cinnamon
2...........................Cardamoms
3 to 4...................Cloves
1/2 tsp.................Cumin
1/2 tsp..................Pepper
1tbsp.....................Raisins (Kishmish)
1tbsp......................Cashews (Kaju)
1 ........................Onion very thinly sliced
1 ..........................Lemon
2tsp........................Sugar
Salt



Method :

Wash the rice well and drain all the water .
Spread this rice on a plate to dry.
Heat the ghee and fry Cashews till golden and raisins till they puff up separately.
Remove and keep them aside.
In the same ghee fry the onion slices till brown and crisp and keep them aside too.
Then in the same ghee add all the spices and add rice and stir fry well.
All the grains should be well coated with ghee.
Add sugar , salt and garam masala and again stir fry for 5 minutes.
Add the juice of one lemon.
Add 5 cups of hot water and let the pulav cook .
When almost cooked add the butter on top and cook till done.
Decorate the pulav with fried onions, cashews and raisins .
Serve with a simple daal or with any gravy vegetable of your choice.

Note :

1) Always semi dry the rice after washing it . This helps in preventing the rice grains from sticking .
2 ) Adding lemon juice while cooking pulav too prevents the grain from sticking.
3 ) Sprinkle the sliced onion with salt and after 10 minutes squeeze out all the water from the onions.
     Then sprinkle onions with cornflour ( just 1 tsp ) and fry . This will help in making the onion crisp in less
     time and will absorb lesser ghee too.
