Nachanichi Wadi ( Ragi Sweet Diamonds)

The summer is in full form and is effecting many people. This is the time of the year when we need to take lot of natural coolants to keep our body safe from the ill effects of the hot weather. Though juices , buttermilk provide us much relief , this wonder millet ragi also is very effective .

 Ragi is rich in calcium and at the same time cools the body. Make a habit to use it regularly in your diet during summers.

 sweet which I have made is little time consuming and needs some advance preparation as well . But its delicious and healthy too.

Kids as well as adults love this yummy preparation.







Ingredients :


2 cup ......................Whole Ragi  ( nachni )
1 n 1/2 cup .................jaggery  ( chopped )
1 cup.........................fresh grated coconut
1 tsp........................cardamom powder
few ........................cashews or charoli ( chironji) or raisins ( optional)



Method :


Wash ragi and soak it overnight in water.

In the morning drain the water and tie ragi in muslin cloth .

Keep it in some dry place and keep on sprinkling some water every 3 to 4 hours.

You will see very small white sprouts coming out of ragi.

Now grind ragi along with coconut and water .

Strain the thick juice and again grind the remaining coarse mixture.

Repeat grinding till you get almost watery juice after straining.

Discard the left mixture.

Now add 2 to 3 cups water to the thick juice and let it rest for 5 to 6 hours.

The thick residue with settle at the bottom.

Strain the upper water carefully without disturbing the bottom residue .

This strained water can be had as it is after adding some sugar and lemon juice.

It is an excellent coolant during summers.

Now to the residue paste add jaggery and water and make a batter ( thinner than dosa batter).

Let the jaggery melt before you start cooking

Take a non stick kadhai and add 1 tbsp ghee to it.

Pour the batter and stir continuously at medium flame.






Add cardamom powder and dry fruits of your choice.

When the batter thickens and it starts leaving the sides lower the flames.

Now take the mixture in a  greased plate and spread it evenly and let it cool completely.

Cut into desired shape.

Multigrain Tawa Roasted Nippats

Whoever frequents the Iyengar Bakery has to be a fan of their Nippats along with all the other delectable goodies found there.

 Nippats are usually fried crisp poori like snacks had with tea . They are made with rice flour and chana daal .

But today I tried out a healthier version with a mix of different grains and also added methi leaves and onions to it. I skipped frying altogether and dry roasted them on a Non stick tawa on a slow flame till they were crisp on both sides.

I found these nippats to be far more healthier than the traditional ones and they require minimum oil too. Plus the best part was that there was almost no compromise in taste and so I was mighty pleased with my experiment. So friends try this healthier version and enjoy your favourite snack guilt free.





Ingredients :

1 cup....................whole wheat flour
1 tbsp...................oats powdered
1tbsp...................ragi flour ( nachani)
1 tbsp..................bajra flour
1 tbsp.................jowar flour
1 tbsp.................soyabean flour
2 tbsp................very finely chopped green chillies
1 .......................onion very finely chopped
1 cup.................methi leaves very finely chopped
1 tsbp.................sugar
1 tsbp.................dhana jeera powder
1 tbsp.................kalonji ( nigella or onion seeds)
1 tbsp.................black sesame
2 tbsp................oil
salt
water








Method :

Add everything and make a dough which is not too hard or too soft.
Make small bettlenut size balls and roll out thin puris.
Dry roast them on a non stick tawa on a very slow flame.
After 10 minutes turn them over and roast on the other side.
Continue till they are crisp on both sides.
This will take maximum 30 to 35 minutes.
Your tasty healthy crunchy snack is ready .

    Multigrain Thalipit

    For our morning breakfast I  usually opt for dishes which are easy and hassle free yet they provide the needed quota of vitamins and proteins. Whenever I make dosas, pancakes or thalipits I make it a habit to include add atleast 3 to 4 different types grains to make the dish wholesome. These multigrain thalipits are one of them. They are tasty as well as nutritious .



    Ingredients :


    1 1/2 cup ..............Ragi flour (Nachni)
    1 tbsp..............Bajra flour
    1tbsp...............Jowar flour
    1 tbsp..............Soya bean flour
    1 tbsp..............Besan
    1 tbsp .............wheat flour
    1 tbsp.............rice flour
    2 ....................onions cut finely
    1 cup ............cabbage cut finely
    3 to 4 .............green chillies chopped finely
    2 tsp.............coriander cumin powder
    salt as needed
    jagerry as needed

    Method :

    Mix all the flours along with onion , cabbage and chillies.
    Add turmeric powder, dhana jeera powder, salt and jaggery.
    Add enough water and make the batter of thick consistency.
    Heat the tawa and spread the batter in round shape with hands.
    Cook by covering the thalipits with a lid.
    When one side is cooked turn and cook the other side till crisp and reddish brown.
    Serve these nutritious thalipits with ketchup , green chutney or home make butter.

    Nachani (Ragi) Ladoos

    Power packed combo of Calcium and iron for kids and adults alike. They are superbly delicious and guilt free .


    Ingredients :

    Nachani flour - 250gm
    Jaggery - 1 cup or as required
    Dry Kharik - 50 gms
    cardamom powder - 1 tsp
    Ghee- as per required





    Method :

    Dry roast the nachani flour on low flame till it gives out aroma.
    Dry roast Kharik and crush and powder them coarsely.
    Cool down the nachani flour.
    In the grinder mix nachani flour and jaggery and just run the grinder for 4 to five times stopping after every few seconds.
    Take it out add cardamom powder and kharik powder and mix well.
    Pour warm ghee and make ladoos.


    Note : If hot nachani flour is put in grinder with jaggery , the jaggery will melt due to the heat and the mixture will become sticky preventing you from making ladoos easily.
