A quick yummy dish loaded with the goodness of paneer & mushrooms .

A favourite option for kids tiffin box as well as for office lunch box.

This stir fry can be enjoyed as a one meal dish by weight watchers too.

Cream cheese stuffed Mushrooms

A very quick and easy appetizer. The delicious filling of creamy cheese makes this an all time hit at any party or function.
Do remember to always cook the mushrooms at high flame which helps to retain the juicy texture of mushroom .

Tarte Flambee ( A French Tarte for IFC - 2)

IFC  or (International Food Challenge ) is an event started by  Sara  & Shobana  where every month we get to post recipes from a specific country .

For this month we were given some recipes from France . This Tarte that I have made is a French Alsacian dish. It is very easy to make though the process may look  a bit complicated and time consuming.

 This is a delicious savory tarte which was enjoyed by all of us .





Ingredients For the base : 

2 cups ...................wheat flour
2 tbsp.....................Maida
2 tbsp....................olive oil
salt
ice cold water


Method  for the base

Mix all ingredients except water very well.

Now add ice cold water and knead a  soft but stiff dough.

Plastic wrap the dough and keep it in fridge for an hour.


Ingredients For the sauce : 

4 tbsp ....................crumbles paneer
4 tbsp.....................sour cream ( or fresh cream)
4 tbsp....................cream cheese ( chenna in hindi)
4 tbsp....................milk
1/2 tsp..................pepper powder
1/2 tsp.................nutmeg powder

Make a sauce by grinding all the ingredients to form a smooth paste for 15 seconds .


To be spread on the top :

1 .........................large onion sliced
6 to 8 ....................mushrooms thinly sliced
200 gm ..................paneer ( cottage cheese ) sliced
1 cup....................shredded cheddar cheese

Saute the onions and mushrooms in 1 tbsp oil till raw smell disappears.




Assembling the Tarte :

Preheat the oven and grease the baking sheet.

Now take out the chilled and wrapped dough and keep it on the baking sheet.

Press the dough with your hands till it fills the greased sheet .



Form a slight border by pinching the edges upwards.

This ensures that the sauces do not spill out while baking.

You can also roll it in a thin rectangular shape.

Spread the sauce evenly on the base .



Sprinkle the sliced onions, mushrooms , sliced paneer and top with grated cheese.

Bake for 20 to 25 minutes till the top becomes golden brown.

Cut in pieces and serve warm with ketchup.

Soy Pepper Mushrooms

Mushrooms as we all know are rich in  protiens and iron and also is a good source of vitamin D. Vegetarians can use them as they are a good meat  substitute.

This mushroom dish can be prepared in a matter of minutes and is one of the easiest dishes. It required minimum or masala and can be had as a starter during parties or even as a side dish with fried rice .





Ingredients :

15 to 20 .....................Mushrooms
1 tbsp.........................cornflour
1tbsp..........................soy sauce
4 to 5 ........................garlic cloves (crushed)
1 tbsp.......................pepper powder
2 tsp..........................oil
salt



Method  :

Clean and wash the mushroom thoroughly and pat them dry.
If big cut them in half or you can keep them whole.
Sprinkle them with cornflour and keep them aside for some time.
This ensures that they don't ooze out water while cooking and remain crisp.
In a pan add  oil and add crushed garlic.
Keep the flame high and add mushrooms.
Add soy sauce, pepper powder and keep stirring them for 5 minutes.
Put off the burner and add salt .
This prevents them from watering and they remain crisp.

Mushroom Capsicum bhaji


This is a very tasty and no hassle dish . I frequently make this vegetable as it is a favourite of all in my family.

Ingredients :

1/4 kg ........................capsicums cubed
1 packet.....................mushrooms (sliced)
2 .............................onion chopped horizontally
1 1/2 tsp....................pepper powder
1 tsp......................sugar
1 tbsp......................fresh cream (optional)
salt
oil




Method :

Heat oil and saute the onions till golden and transparent.
Add capsicums and cook on high flame . Keep them crispy and half cooked.
Add sliced mushrooms , sugar, salt and pepper powder .
Saute them on high flame for 5 minutes add fresh cream and serve.
This simple dish is unbelievably tasty.
It can be served with rotis or parathas.

Mushrooms Stuffed with Cottage Cheese

I was inspired to try this dish when I saw some stuffed mushroom recipe posts by other bloggers. As I had some Paneer I decided to give it a try with the same. The resulting dish was very satisfactory and delicious.
You can have it as a snack with some ketchup or as a side dish with the dinner.

Ingredients :

Big Button Mushrooms - 20-25
Paneer (cottage cheese) - 150 gm
Chopped onion -1
Chopped green chilly - 1
Chopped pudina - 1 tbsp
Garam Masala - 1 tsp
Boiled and mashed potato - 2
Sugar
Salt
Ghee





Method :

Thoroughly wash the mushrooms to remove all the dirt.
Remove the stalks of the mushrooms and finely chop them.
Heat ghee add onions, green chillies and saute till onions are tranparent.
Add chopped mushrooms stalks.
When they are cooked add mashed paneer, pudina, garam masala, salt and sugar.
Stir for 2 minutes and remove from fire.
Stuff the mushrooms with this mixture and cover them with the layer of potato mash.
Smear a non stick frying pan with ghee and arrange the mushrooms on it.
When cooked on one side turn them and brown the other side.
