Batata Bhaji

Potatoes are used in many many dishes and there is no end to what all you can do with this humble stem vegetable. This simple potato bhaji can be done in just 10 minutes and goes well with puri, roti or rice.
We had it with puri and green chutney .
On a day when you are feeling lazy this dish is a blessing ...


Ingredients :

4 to 5 .....................potatoes peeled and cubed
1tsp.........................cumin seeds (jeera )
1tsp ..........................fenugreek seeds ( methi )
1/2 tsp.........................asefoetida (hing powder)
1/2 tsp.........................turmeric powder (haldi)
2 to 3 sprigs ...................curry leaves chopped
2 to 3 ........................green chillies slit in two
1 tbsp ......................oil
1 tsp ........................sugar
salt






Method :

Heat oil in a pan.
Add mustard , when they splutter add methi.
Add chopped curry leaves and chillies.
Lower the flame and add hing and haldi.
Add potato cubes, salt , sugar and cook till done.

Pineapple Watermelon Salad

The Summer has started and all you want to have is something cool and refreshing which will leave you fresh.
This colourful salad made from fruits is very inviting during such times. You can have it with other dishes or simply make a meal out of it . This gives you plenty of water content and a boosts you instantly.






Ingredients :

2 cups ..........................Pineapple cubes
2 cups.........................Watermelon cubes (seeds removed)
1 cup...........................onion roughly chopped
 1 ..............................green chilly finely chopped
1 tbsp.......................finely chopped fresh coriander leaves
1 tsp........................sugar
1 tsp.........................chaat masala
salt





Method :

Add all the ingredients except salt and chaat masala.
Gently mix them all with a fork.
Keep in the fridge and chill thoroughly.
At the time of serving add the salt and chaat masala and serve immediately.


Note : If salt is added with other ingredients , then the salad will leave water and it wont taste good.

Lemon Coriander Soup (with eggs)

Want something hot and tasty without much efforts ? Here is the answer....  This lovely lemon coriander soup is not just yummy but is totally hassle free to make. You can avoid the use of egg if you want . This soup is refreshing and filling .

This is a good option to make on days when we have heavy lunch and dont feel like eating food for dinner  but still long for something light and tasty .

This is a regular and favourite in my home usually on Sunday nights.






Ingredients :

 1 cup......................finely chopped fresh coriander leaves
 1 tbsp...................finely chopped garlic
1..........................green chilly finely chopped
1 .....................lemon
2 tsbp........................cornflour
1 tsp...........................pepper powder
1 ........................egg (optional )
1 tbsp ....................oil
salt


Method :

Heat oil in a pan and add chopped garlic and chilli pieces.
Add 3 cups water and bring it to boil.
Add salt, pepper powder and squeeze the juice of lemon.
Mix the cornflour in cold water and add to the boiling water in the pan.
When the mixture thickens a bit add the chopped coriander and cook just for 2 minutes.
Beat the egg and add it to the soup from a height .
This will make the egg thicken in thread like shapes .
Serve immediately.

Beetroot Paranthas



There are some vegetables which are loaded with nutrients . But if your loved ones dont like to eat  it you are at loss as to how to make them have it and enjoy it too. One such superb way is to make parathas. In my family every one just loves paratha and so every time I make parathas I try adding new things , but taking care to see that the taste is not spoilt. Beetroot parathas is one such dish. My son who usually does not touch beet in salads , just cannot  stop himself from eating these parathas ( yummy for him and healthy for me .......)







Ingredients :

2 ..............................beetroots (boiled , peeled and grated )
2 ................................potatoes ( boiled, peeled and grated )
3 cups .........................wheat flour
1 tbsp...........................cumin - coriander powder ( dhana jeera powder)
1 tbsp ............................Dry mango powder ( amchoor powder )
2 tbsp..............................ginger chilly paste
salt

Method :

Mix all the above ingredients with just enough water and make a dough.
Roll out the parathas and roast them on a tawa adding spoonful of ghee or butter on both sides.
They taste yummy with any vegetable or achar or dahi raita.
They are just delicous.
Adding potato makes them soft and fluffy.
We had a hearty lunch with these parathas accompanied by palak paneer and egg curry.
